Ingredients
1 cup basmati rice
2 medium onions
2 tsp sambhar powder
1 handful of coriander leaves
2 tbsp refined oil
1/2 tsp garlic paste
4 large tomatoes
3 medium green chillies
1/4 tsp turmeric
Salt to taste
1/2 tsp ginger paste
For tempering
1/4 tsp mustard seeds
7 curry leaves
1 pinch asafoetida
2 red chillies
Method of preparation
Soak the rice: First of all, wash the basmati rice and soak it for 20 minutes.
Cook rice: Boil water in a deep pan. Add the soaked rice and cook until it becomes soft. Then, remove the pan from the heat and set aside.
Make tomato puree: Grind chopped tomatoes in a blender to make a puree.
Fry onions and spices: Heat oil in a pan and add the tempering ingredients. Then add onions and fry till they turn light pink. Add green chillies and ginger-garlic paste and fry for a minute.
Add tomato puree and rice: Add tomato puree, turmeric powder, red chilli powder, sambhar powder and salt and fry till the oil separates from the masala. Then add cooked rice and mix well.
Serve: Transfer tomato pulao to a serving bowl and garnish with coriander leaves. Serve hot with papad, potato chips or raita.
